Jack Frost Cocktail Recipe - A festive eclectic combination of coconut, blue curacao and pineapple juice.

Ingredients
Light corn syrup for rimming glasses
Shredded coconut for rimming glasses
2 cups ice more or less depending on desired consistency
1/2 cup pineapple juice
1/4 cup blue curacao
1/4 cup vodka or light rum I used rum
1/4 cup cream of coconut
Instructions
First prepare the glasses by rimming. In a plate, take out shredded coconut. Wet the rim of glass with corn syrup and dip the glass in coconut.
In a blender, add ice, pineapple juice, blue curacao, vodka and cream of coconut. Blend until desired consistency is achieved (approx 2 minutes).
Pour Jack Frost Cocktail into prepared glasses.
Serve immediately
